
Vanilla cupcake recipe:
3/4 cup of Olive Oil
3 eggs
3/4 cup caster sugar
...3 tsp vanilla essence
2 cups SR flour
3/4 cup lite Milk
180 degree oven
chuck all ingredients in a big bowl, whisk till no lumps.
option A: fill baby patty pans up 1/4 to 1/2 full...bake for 8mins
option B: fill large patty pans up 1/2 and bake for 12-15mins (longer if necessary)

Philly Cream Cheese topping:
1/4 cup melted butter
1/2 block lite philly cheese
icing sugar to suit thickness of topping (I used about 1.5cups)
...
mix till smooth, add colours if required...put into glad bags, cut tip of corner off, pipe onto cupcakes as desired.
